We use open VPN on rocky Linux on our hardware and manage the updates. Never used them to link outside the UK but myself over site2site hasn't been a problem for us. Only used with mysql and mariadb though.

dont use it but is the wifi 2.4Ghz. You may need to enable a seperate non 5Ghz access point. Can usually be set in the router. What BB / router is it. Sky and EE can be a pain

Haven't done international but just use a site to site VPN and a central server.the door controllers will use local data if the link is temp lost
