best book i ever bought was by Mike Constant.

Called the principles and practice of CCTV.

lot of old tech in it ie tubes etc but the theorys are sound. Great grounding IMO

The Mike Constant (Tavcom) book is really good. Another good one would be Joe Cieszynski, Closed Circuit Television.

specialist books with limited production run always cost a few bob

it's the same with training videos which can be even more.
