I have a project on with a client who would like HDD recording for upto 9 cameras/ 30 days, but wants 3 audio channels anybody know of a product avaiable, I can only find single channel

I believe the budget makeCOP,XP Dvr units have 4 way audio.

DVR365 (as already posted above) is a good product for what you want otherwise you may needto build a PC system with multiple audio. Both Geovision & Avermedia have suitable cards.

Just double checked on product sheet that COP XP range does have 4 way audio. Only problem you got with them is that they only do a 4way or 16 way. They only do 8way in the VP range which has single audio.
