I have a customer that wants a panel that will unset at a certain time in the morning after a night set, as they keep forgetting to unset and set the alarm off every other day.

Does anyone know of a panel that can do this?

Risco Agility is a wireless panel that has full set/unset scheduling as a programmable option. If you use it make sure you link it to the phone line so you can upload the programming to it (otherwise the programming is a bit tedious....). The upload download software is free to download from Risco website and makes programming a breeze. The kit is reliable used in any normal environment.

Why are they setting it off? Cant the an entry point be timed thus giving them the reminder?

Most decent panels will do auto set/unset

Couldn't you put it on a timer relay which triggers the zone as a key switch. That would work! Seems a bit odd though. Tell the, not to forget!
