Got a AVTECH AVC761 (MPEG4USB/250), 250GB that I want to upgrade to 500GB or bigger if possible.

Does anybody know whats the biggest hard disk I can get in it and the type I need. I've trawled the internet for a manual but cant find one. Spoke to Kinetic as well since I saw mine on their website but they only supply to distribution and fobbed me off.

Yes, you can install a 500GB Hard Drive with no problem at all.

Firmware may be an issue, but it should not be issue.

I use Western Digital Caviar Hard Drives. I am not saying that is the best HD. I am saying that I know that they do work.

If it does not work then switch to the opposite of what the Hard Drive is set for (Master VS CS)

There are several versions of the 760 and some will not support 1000GB using two 500GB Hard Drives. It is worth a try though.
